I have a wonderful problem.......too much meat to smoke. I'm helping another team in a girls against the guys cook-off. But I only have 1 cookshack. Can the pork ribs be partly smoked in batches and then all of them be finished at the same time in ovens? I was thinking of wrapping each rack in foil, and then slow cook them to finish. Are there any problems that I don't see?

When you talk partly cooked,I wouldn't recommend less than 90%-95% and that is difficult to judge.

Usually better to complete your cooking,wrap and chill.

When you need them,finish on a grill,in oven,over broiler,etc.

Ribdog cooks volumes,chills,and holds on a regular basis.

He'll probably be around tonight.

Like Tom said, I would also finish everything and then chill the ribs until you are ready to warm them up for serving. Just before I rewarm them, I will let the chilled racks sit out for a short while (30 minutes), to let them warm a little before putting them on the grill or back in the CS. Keep in mind that you only need to rewarm them to the 140* level to get them into the safe zone.

It should work out fine for you.
Tom, RibDog........thanks for your help. I did as you said.....smoked the ribs at 225* for about 4 1/2 to 5 hours....wrapping them in foil about half way through. Let them set for about 1 hour until they cooled and into the refer.
First time ever in a cook-off....2nd place.
