Thanks to all the posts/posters I dont have any questions of what is required in a trailer I'm getting ready to convert!

Going to keep trailer simple plan is a lunch wagon proably just pulled pork.

Like so many I don't feel a big interest in the Catering thing. That said what other things do I want to have the room for or in the trailer so if I get talked into a job I will have all I need?

before you do anything. get with your state authority. here in florida is just part of the list you are looking at;
plan approval- this is 150 bucks. you will submit a drawing of your rig and equipment by name and type. after approval this can't be deviated from.
equipment- at bare minumim here you need a triple sink with dual side boards,hand wash sink, hot water, potable water tank, grey water tank with 15% greater capacity than the potable and a hood system. where i live if no grease is involved than no fire suppressor in the hood is required but i went well above state requirements for fire bottles (i have 2 in the rig and one next to the gennies and one in the truck) and still remember my navy dc training.
creditenials- down here you will be required to get a certified food safety managers paper. pretty simple,a little under 200 questions on my last exam.
commissary- you will need that down here and make sure to keep a log book signed!!!!
if you pass all that you will get your "mfd" (mobile food dispensary) here so i hope i helped some.
by the way can't figure out football. doesn't matter either american or european. but then again i can't figure out that rugby players in england(and they wear helmets) saying the springboks(and they don't wear helmets) play to rough??!!! helmets??!!! we don't need no stinkin helmets rugby players eat their dead so go ALL-BLACKS!!!!!!

then again the tow rig can never be big enuff!!!trying to get peg to let me get dodge 3500 with cummins and a a banks turbo upgrade. figure 750hp and 1500 ft/lbs torque just may do it for towing the rig.!!! ez potatoes for doing the bbq contest in crossville tennessee.

We need a bigger truck too! Bigger is better, in trucks and trailers! I need an extended or crew cab and a long bed. We have some kind of plate hitch on the bed for the gooseneck of the trailer, long bed is good. I don't know about all the turbo and torque stuff, it sounds good though! Woof! : ) Girls like big trucks too!

I would also like one of those FEC's with the whirly farris wheel racks ! : ) Looked good until Patrick saw the measurements. He then not so gently explained that it just would not fit, no how, no way. So, if Fast Eddy is listening, how about designing one with the whirly racks for a more moderate sized trailer?

So here is the list of must haves that we don't have:
Hefty Trucks ... More Trailer Space ... and a Smaller Whirly FEC (at least for me).

What else do we need now? Has to be more!

They have them, they're called "Buffalo Choppers" and the larger Q restaurants use them all the time. New ones are expensive, old ones are cheaper on E-Bay, but watch out for Warped Bowls.
Jack, about the tow rig ... Had a huge scare this morning on our way to The Flea Market ... Our truck lost power and 40 MPH was the top end. The first thought was that we had blown a head gasket. Came back home. Called to cancel the market. Way too far to limp there. Too risy too. No one was happy. Not us and not them! 10 minutes later we called back to uncancel. Apparently there are two sensors under the air cleaner and one was not in its proper position. They somehow have something to do with regulating the gas. I do not know the particulars, names etc. Finding it was a chance thing when Patrick was looking for signs of the blown gasket. For us, with the gooseneck connection even borrowing a vehicle is all but impossible. Last thing on earth we wanted to do was cancel.

Makes you realize just how important the tow vechicle is. I have always known it is imprtant, but the very real idea that it is down is pretty earth shattering. Still, it was a good day. Got lucky !
