I just acquired a model 55 and i am going to try my first thanksgiving turkey. It is a fresh 30 pound bird. can someone give me some directions on the best way to cook this bird? As i said i am new to this style of cooking and dont want to waste a good free range turkey.

8lb turkey breast
21/2 oz cherry
injected with 8oz cajon butter sauce (tony cachere)
favorite home chicken rub on top of and under skin
set temp on meat for 160*
4 hrs at 250* mid shelf on the 55
I'll let you know the results later
