Smoked a turkey for a late Thanksgiving dinner. Set AQ at 300 and preheated the unit, placed turkey, 13.8#, in small roasting pan on a "V" rack, to collect drippings from turkey. Smoked with 2 oz piece of apple wood for 6 hours, breast was 165, but deep thigh was only at 148. As the rest of the meal was waiting on me, I finished the turkey in the kitchen (conventional oven) at 400. Did a great job of browning bird and finally got the deep thigh up to about 170. However, the breast was well over 180. Temp measured with my Thermpen unit.
How do I smoke the turkey in the AQ to fully cook all parts of the bird without overly drying the breast meat? I want to finish the bird in the AQ without having to use the kitchen oven. Thanks for the help.
