Since turkey time is approachin',I thought I'd toss out this tip-aside from how to cook.

Tendons can be a real aggravation,for neat work.

Jacque Pepin used to demo this method,and it usually works well.

We have discussed this and it is probably in the archives.

If you cut the skin around the ankle, completely around, pryor to cooking, as it cooks the skin shrinks up and those tendons will be exposed so you can just take a pair of needle nose plyers and pull them straight out when they are done...
