Grabbed a couple of turkey legs, wings and ½ a breast. Brined for approximately 4 hours, rinsed, dried and applied a rub. Smoked with pear until temps hit 157 in the breast, 177 in the leg, approx. 2.5 hours at 250. The legs and wings were tasty, the breast unbelievable!!!!!! Very moist. Sliced for sandwiches. At $4lb from Gelsons, this is SO MUCH better than the processed and treated stuff sold in local grocery marts. Tastes better too. Enjoy.
