I've done turkey thighs, and chicken thighs and I shoot for 180 deg. When I did mine it was on a Brinkmann, set at 230 deg. and it took me 3 hours.

Just did a whole oven stuffer roaster in my smokette using the Chicken Rocket filled with marinade and I have to tell you it came out fantastic. Much better than I even anticipated.
