I shoveled the snow so I could get my cs020 outside. The temp is 7* 30 mph wind, but after a couple of smokes in freezing temp I have "no fear". This is my 1st try at spare ribs. I actually watched a video in the archives on how to trim them. I'm sure I was far from perfect,but they sure look good. I had little trouble doing this and totally suprised myself.

I also realised that my smoker had finially built up a little crust on the walls. What a good start to the day.

You know, you don't HAVE to trim them. If you're doing full spares, many people prefer them to St. Louis.

Just ask away if you have any questions. I've trimmed a few over the years.

Thanks Smokin,
I learned my lesson on pork and rubs so I think I'm good there. I was wondering about the breast bone piece that I also put in the smoker. Will it take about the same time to cook as the ribs and I assume that I use tooth pick test on it?

I agree. I might pretrim them if serving to company, but otherwise the only trimming they get is on my plate.
