I'm sure someone will have some good advice, hopefully before my guests arrive.
I put a 5# butt on at 7pm @ 250* expecting it to be done around noon or slightly before. All others I've previously done have taken around 16 to 19 hours. When I checked at 7 this am it registered 195* in several places. Since I'm expecting everyone at 4 and expecting to eat around 5 how should I treat the butt until we're ready to eat? I've got it foiled, toweled and coolered but know it will only hold for around 4-5 hours. What is the best way to treat the meat? Help. Thaks.
