Just Smoked some fresh Venison backstrap today
and is it ever good! used a wet brine with Tenderquick for 24 hours then smoked it in my Amerique @ 230 for 2 2 1/2 hours

Oh Man! Does that look good! I have a piece of backstrap in the freezer. I'm may give it a try!
