I have not used walnut bacause I have heard it imparts a strong flavor. This is what I found out it.... WALNUT - ENGLISH and BLACK - Very heavy smoke flavor, usually mixed with lighter woods like almond, pear or apple. Can be bitter if used alone. Good with red meats and game.....I find hickory a little to strong by it self so I cut it with milder woods......just me though
