wineman,
myself i would start out with a full pan of water.
hold about a nice medium heat and i always let the pan just go dry. had some nice results that way. no way would i go direct heat though. this has worked well in my brinkman bullet for the past 20 years and if you do a turkey just do the same as for your butt.
