Hi everyone. New to the site and pleased to find a forum like this. I plan to smoke a 7-8lb. pork butt for Labor Day. Have a Brinkman Smoke n' Pit Smoke King. Is it wise to "water" smoke or just use direct heat? Thanks.
wineman, myself i would start out with a full pan of water. hold about a nice medium heat and i always let the pan just go dry. had some nice results that way. no way would i go direct heat though. this has worked well in my brinkman bullet for the past 20 years and if you do a turkey just do the same as for your butt. hope this helps jack 2 Greyhounds....SMOKIN!!!!
