First cook on the new toy today. 4 slabs of St. Louis cut loin backs. Used the Traeger pellets that came with the unit. Not really crazy about them. The Pecan & Apple pellets from Candy Sue don't arrive until Friday. I guess 5 hrs is toooooooooo long in the FEC Eeker . Slabs looked great, tasted like KA-KA. Wayyyyyyyy over done Mad . The FEC worked flawlessly. Talk about "set it and forget it", what a cooker ! I just flat blew it. Oh well, live and learn. Hopefully the chicken tomorrow will be award winning (if only in my mind).

Now Jim, you know it's a new cooker and you're supposed to stand there the first few times like you do a stick burner, to make sure the fire is where you want it.

The main difference for me is the blast of heat from the bottom. I can't put a brisket in an forget it or the bottom will be crispy critters. I flop mine now and they come out great.

Keep the stories coming.

Wait until you cook chicken on a high setting. First time I did it on 325 or so, I didn't sauce them and got PERFECT fried chicken looking stuff.

Note. For me, the back left corner gets hot so KEEP AN EYE on the chicken.
