What do I do with my skirt?

Mountianman,
Smoke them and use in some baked beans or just cut them up, put some sauce on them and eat them. I love ribs.

Smoke them, slice them in thin strips and make fajitas. Yum, yum.

I'll give them a loving rub and pop them into the smoker.
Now the question is when do I have a look at them. I hate to keep opening the smoker up if its too soon.
I've read somewhere that skirts take less time BUT when do I look the first time???
One, two, or three hours into the smoke??

mountainman, i dont often trim my spares. i fold the skirt back over the bone and pin with a bambo skewer,stays moist and tender,( the wifes favorite piece) like tom said, the snack is the cooks reward. good rib to ya paul

I agree with you spaerib. I pin mine with round toothpicks and smoke it all - also my wife's favorite part of the ribs as she doesn't like lots of fat.
