Just curious as to what y'all at thinking about cooking for Christmas.

I think we'll be trying out first "twice smoked" ham.

Sure hope Smokin will seriously consider filming his Prime Rib cook in detail and present it here on the forum & on youtube! He may need some encouragement!!!

So, what do the rest of you have planned?

We do a dinner on Christmas eve, but nothing big like Thanksgiving. This year we're doing a prime rib too, garlic mashed potatoes, and who knows(or cares) what else. I'm looking forward to sinking my teeth into a nice piece of prime rib.

Christmas day is when I get to play. We set out a spread of tapas/finger food and eat all day. Smoked oysters, asian style baby back ribs, smoked cajun chicken salad, smoked salmon, artichoke dip, fondue, hummus, pasta salad, veggies and dips, smoked fish spread, swedish meatballs, boiled shrimp, smokey links in white trash sauce(mustard and jelly), and whatever else I can think of that sounds good. Crackers and toast and pita bread rounds everything out.
Todd I like that, but Tapas in Carolina's...something is amiss... LOL

For us, it's pretty traditional, the family love this event, so I get to cook it each year.

Seems I'll be doing one of these (hey, you know I love posting this photo)

I'll be doing a PRIME rib roast this year and I'm being asked to film it. I'll see what I can do.

I for one vote AGAINST Smokin' doing a video or even posting more pictures. His pictures have a hypnotic effect on me that I find disturbing. I stare, sometimes for minutes at a time, at pictures like the one above and then even after tearing myself away I find I can't get the image out of my mind for days or weeks. I'm still seeing images of his burnt ends that he posted weeks ago. These recurring images make me linger at the meat display cases and buy more than I intend to when I go shopping, and I am convinced that they also contribute to a substantial amount of over eating on my part, and possibly even global warming. I have been able to mitigate some of the effects these pictures have on me by wrapping my head tightly in aluminum foil before using the computer, but even with this precaution some of the images leak through and start the buying, smoking, and eating cycle anew. Even as I write this I feel myself being drawn into the picture above, and I can imagine myself chewing on the bones even after I've devoured every morsel of meat, and then sucking the juice out of the grout lines on the counter.
