Greetings folks,

What's your favorite brisket size? Depend on the occasion?

New the the forum, not trying to advertise or anything. My family raises American kobe beef and markets it to restaurants, a few stores and direct to customers online (westdakotakobe.com). We currently offer 6-8 lb briskets. We've had some inquiries for larger briskets for competitions.

So how do you like your briskets cut? Thanks!

I think mostly you answered your own questions.

Your product would be used mostly by the chefs on the forums and I'd guess they would be seeking smaller cuts.

The comp cooks may occasionally cook a full packer.

The usual choice is as large as we can get,because there are more of the areas we use for turnins.

bbqforum.com would have a larger user base.

My best results have come from briskets around 12 pounds before I do any trimming. I get most of my packers at Costco, marked USDA choice but who knows what that means anymore. My guess is that the really big packers I've done, 15 to 18 pounds plus, have been from older cows, but I don't know for sure.
