Mostly, the flat is smaller and usually has alot of fat trimmed off. The full cut is both the flat and point and usually has not been trimmed alot. The full packer cut can be quite large.
I agree the flats are sometimes too small and dry out easily.
I smoked a flat yesterday - actually, the package had 2 pieces in it. I smoked one with the fat side up and the other fat side down. OMG - MAJOR difference. Fat side up is the only way to go. Next time I will make sure to get a packer.
Flats cook faster but are prone to drying out. But it is still good eats!
