I have seen several discussions about favorite wood for smoking, but never seen this particular discussion. I know I like using maple wood for ribs & bacon. It was just marked "maple". But is there a difference in the taste of different types of maple? I know of one person that uses red maple but has access to sugar maple. I have read that some people like red oak over white oak. So my question... is there a better maple variety to use... or a bad one?
