I have been smoking stuff for the past 5 yrs. or so. I have used some other smokers with good results. There has always been a learning curve as to how to use each particular smoker. They all had different issues. Recently I started researching smokers. My research always led me back to Cook Shack. Well I made the leap, and bought an AmeriQue. I received it about a week ago, and only had time to season it. Well yesterday I finally had the opportunity to actually cook something. I smoked 2 pork sholders (boston butts). I must say I have made some good pulled pork in the past, but the finished product here blew that stuff away. It had a great bark, good moisture content, and pulled with no effort. I followed all of the tips I could find on these boards.
Just want to say thanks for all of the good info. here, and keep it coming.

There are instructions with the smoker, but I used the advice on the forum. I put some cheap pork belly , 6oz. of wood, and let her rip at 250 deg. for 4 hours. Worked well. It is even better with every cook. You won't be disappointed.
As I said earlier it is very straight forward, and not near as intimidating as we often make it.
You will have fun, and make some great Q.
