It's fun to experiment, but I strictly use the hickory blend purchased from Eddie. I've tried some other things, including his cherry and pecan blends, as well as pure fruit woods, but you need some oak in there for heat. Don't overthink this aspect. Pellet cookers are different than stick burners. There may be some difference, but it's going to be very slight at best. There is a reason Eddie stocks probably 10 - 1 ratio of the hickory to the other two.

I haven't had much of a chance to try anything other than hickory and cherry. I haven't noticed any difference. In talking with Eddy, he pointed out that trees in the same family like hickory and cherry probably wouldn't give much of a difference. Trees from different families may impart subtle differences.

I'd be a leary of heating pellets since they don't use food grade materials in the manufacturing process.
