It took 18 hours! It hit 197F on the Acu-rite and I couldn't wait to take a look.

Awesome bark, and melt in your mouth! Could have used some salt but it was unreal. My wife said "Well it looks like you have figured out BBQ". (I've been trying on that offset cooker for years to get what I got in the CS on the 1st try)

Congrats on the success D9/Dave. You comment is very typical for an old offset user, great success first time out.

My recommendation...

...Keep a log of everything related to the cook so that you'll know what worked, what didn't, etc. With the CS you can now concentrate on the product itself and not have to worry about temp control. For logs,I have some available in either word or excel format that I've shared before on this forum.
