First off I would like to say thanks a million for all the incredible info on this site. You guys are awesome. I must have read through this site for a month before I got my new AmeriQue.

I did have an issue with the electronics on mine when it came......I was NOT happy about that but Cookshack sent a new one over night and all is well.

I cooked my first Brisket last night. About 12.4 lbs. (Packer) Put it in at 7 p.m. (a little too early) and set the probe at 195. When I got up this morning at 7 it had been in hold mode for about 2 hours. I pulled it out and separated the point and foiled the flat for later. I followed SmokinOkie's directions and chopped up the point for burnt ends which I ended up cooking about another 2 hours in the foil pan and OMG!!! I can't believe how good they are!! Hard not to just eat the entire pan on the spot. I had to beat my daughter away because she wouldn't stop eating them. I'm going to use some of it for beans this weekend.
