Are you using a cookshack Peter? If you are, remove membrane, wash off ribs and blot dry with paper towel, apply rub,refrigerate overnight, prepare smoker,place ribs in and smoke for 6hrs at 225.......you can check em after 3 or 4 hrs if you like. Look for meat pulling away from bones and tug on one if you like. When they are done, remove , double wrap in foil, and place in a cooler for a couple of hours covered with towels..... Check out Smokin's "Ribs 101" for better guidelines than what I'm givin ya .....I'm trying not to be too complicated. Good Luck
Have a homemade steel barrel on a steel barrel connected by two pipes and has one exhaust and I just purchased a side fire box smoker (charbroil) . Didn't have a lot of extra cash so this unit didn't look bad for the $. You guys are all a real big help anytime I need it. THANKS Eeker
