I went to a wholesale company and got what I thought was one packer -trim brisket. Weight was about 11 pounds. What I found inside the cryovac package was 2 untrimmed flats. Average thickness is 3 inches with a nice 1/2" or so fat cap. I figured that I may as well go ahead and cook, so I rubbed them down last night and would like to cook them overnight, so the question is- can I cook them both at the same time in a Smokette? I trimmed them down on the edges a little so they fit on the grills. I only have one Polder, so I'll start that on the lower one to keep track of the temp- I also figure to swap the briskets between the 2 racks at about 7-8 hours so they cook evenly. Anybody have any experience or advice with this plan? Thanks in advance for anyone's help!
