My sister asked me to make some pork butt's for her son's birthday party. So I picked up 2 pork butt's 1 was 8.43lb's and the other was 8.12lb's. Rubbed them down with Pappy's honey butt rub on thursday night. Pulled the butt's outta the fridge on friday evening and in the smoker at 700pm. Set the temp to 200deg and went to bed. Got up to go to work saturday am and bumped the temp to 225deg, meat temp was 184deg. Came home at noon and the meat temp was 199deg. I FTC the 2 butt's and delivered them to my sister's house. They were a big hit and everebody was asking to take some home with them. The butt's had a nice sweet and smokey bark and fall apart juicy and tender on the inside.
I used 2oz of hickory and 3oz of apple wood produced just the right amount of smoke. Meat starting temp was 46deg. Total cook time 17hrs.
