Bigger is ALWAYS better. If you end up doing a lot in the 300 and get popular, then you know you'll want a larger smoker.

Guess it depends on what you want to do it with. You don't have to go larger if you're never going to do large amounts.

Do you want more mobility or will it be stationary? Say ribs, if you don't need the larger capacity, the 300 is certainly easier to maneuver.
That is something I have not decided on yet. An O.H. rep mentioned to me that it is nice to have racks wide enough to hold 2 full sizs pans end to end. That makes since to me. Which FE will hold that type load? Maybe I need to look at the specs on each one. For catering or a store you need to be able to do all sorts of jobs with your cooker. Thats just my thoughts on which one to plan to get.
