Got my four rib racks for the FE a few weeks ago. Have not used them yet but am doing a rib cook for the offensive line of the Oregon football team. I normally cook baby backs at 250 for about 3 hours and 45 minutes to 4 hours, they come out perfect. Does anyone have an idea the time it will take when I load up the FE with 40 racks of ribs at once? I figured I should shift the bottom rack to the top rack maybe two hours into the cook.
