OK...I usually smoke 30 racks of ribs on my FE100 at a time and they turn our great. I have room for one more rib rack and was wondering if anybody has done 40 racks at a time and if so how did they turn out and how much longer does it take? For me with 30 racks takes 7 hours starting with cold smoker at 180 for three hours then kicking up to 225 for three hours and finishing the last hour to carmalize the sauce at 300.

I've done 40, didn't seem a huge change

BUT.

I do rotate the racks because either the one on the bottom nearest the heat or the one at the top will tend to finish faster.

I also have hot spots in the back left so I make sure the two racks on the left have the thickest part of the rib in the back
