Okay heres what happened. The .98 ribs weren't quite what I had hoped for. They were lean, but not real big. Cooked forever, well maybe not that long, didn't get much fat in my render tray. They were edible, but not the best.

This weekend I did the .99 ribs, they were fatter and about same size 4.5lb/ full slab. These worked much better, rendered out and became a very fine meal. I have 2 more cryo of the .99 ribs left. Lucky me!!!

Should I have foiled and cooked the lean ribs? I have been reading more about layering flavor, please help, RibDog or anyone else that may do this.

I would appreciate any thoughts on rib flavor layering.
