Yes, you can get more shelves. No stack is required. There is a temp readout on the controller.

Dean, what are you trying to add more shelves for? Keep in mind that if you did add more shelves, it will cut down on the circulation throughout the smoker and may not give the results you are looking for.

on the added thermo question since my fec is in a trailer we ran 5" diameter flex hose to direct it right up to the hood system. i use a taylor remote thermo i got at target for about 15 bucks and poked a tiny hole into the flex pipe and ran the probe in thru the exhaust port. i normally locate it on the 2nd shelf down from the top and to the rear of the shelf and monitor pit temp from that location. don't really know why i decided on that location or if it matters that much but in my note book i always note every 90 mins the digital pit temp and my remote temp. thats how i found out on my particular fec to run way cool on smoke i need to use an equal part mix of oak cherry and pecan.
and to think the old lady called me anal retentive lol
