Use the plastic "S" blade on your food processor, not the mettal blade. I find that It cuts my time by at least 50%. I just throw 3 -4 hunks of meat in and process each batch for about ten seconds.
I "pulled" a 15 pound chuck roast this way this past weekend in about 5 minutes. And I get just the consistency that I like.
If you use the metal blade you will mince it, not good.
