I've renewed my absolute love of barbacoa (beef cheeks). Did them again last Friday. Search on "barbacoa" for AndyJ's thread from 2011 and replies if you're interested. I get beef cheeks at Sam's Club, in a cryovac of about 6-8 lbs. The cheeks are sometimes full sized (about 12 oz or so, and sometimes smaller pieces, There is a ton of fat and gristle to remove and you can't get all of it, but what you can't get melts into a delicious gelatinous coating after low and slow. The flavor is incredible; beefy, a bit gamey, juicy, and just ready for a corn or flour tortilla and some pico de gallo or green salsa with avocado and lettuce or cilantro. Give it a try!

jay124 - Thanks for the cheeky post. I read thru AndyJ's thread (link below to make life easy for folks) and have to admit the finished product looks very tasty. I have to try this sometime. I thoroughly enjoy slow cooked fatty meat. The flavor is always incredible.
I still make them, 2021 version... Good stuff!
Nicely done andyj. Very gelatinous in the first photo; makes me hungry in the second
Looks great, andyj! I can only get cheeks at a Sam's that pretty far away, but I found that trimming them as much as possible and then vac freezing them works really well.
I've been able to find them at the local Wally World the last few years. I don't bother trying to trim them anymore, just pull out any nasty stuff that's left when shredding at the end.
Friday night is busy!!
I just love being plagiarized. (Referring to the post by ali hanima above, who joined on 5/11, and which simply copied my post nearly verbatim.)
