Made salmon last night - used a recipe from the Mastercook archive under Bill Wight called Barbecue at http://www.grassrootsrecipes.com - it's a great resource. Here's the recipe:

Salmon Marinade with Ginger

Amount Measure Ingredient -- Preparation Method

1/4 cup soy sauce -- (reduced sodium)
1/4 cup white wine
2 tablespoons water
1 tablespoon sugar
1 tablespoon ginger root - grated

Whisk well to dissolve sugar. Pour marinade over salmon in a glass casserole dish and fridge it for 45 minutes.

Smoke at 225 for 3/4 to 1 hour.

I doubled the recipe, added 5 garlic cloves pressed in the garlic press, and marinaded in the refrigerator covered with plastic wrap for 3 hours (turned after 1 1/2 hours). It was a filet from Sam's Club.

Then I let it dry for about 30 minutes and put on some seasoning I had from Trader Joe's.

Cooked in with alder wood pellets for 1 hour on smoke, then it took 40 minutes at 250� to reach 155� internal temperature. I cooked it on a small rack with holes in it. Remember to spray the rack with oil.

It was really good. Next time, I'll use a different seasoning rub after marinading.
