Try making some Polish Sausage. I had some Gator Sausage in New Orleans a few years ago and it tasted like Polish or a garlic type sausage. It was very good. Grind gator and mix with ground pork 50/50 and season with favorite sausage recipe, stuff into casings, then smoke. You can make sausage out of just about anything. Maybe bulk breakfast sausage?
