The Athabasken Indians in Interior Alaska use nothing else to smoke fish and meat. I believe it is skinned first. You may check some Alaskan websites and glean info.
Thanks, ladies & gents. Found a couple of sites about Athabaskans that suggest they might use birch, poplar, and alder. Apparently they preserve a lot of food by smoking.
Bet the 3 woods are similar. Probably wouldn't be a bad idea to debark the birch as the bark most likely burns like paper - hence the name paper birch.
Tried birch on some salmon this weekend. It's a light flavor similar to alder, maybe a bit less smokey. Made a very nice semi-dried type of salmon. Probably not enough flavor for most other foods, though, except possibly turkey.
