Mad, I have used apple juice, pear juice, mango juice and my friend even uses fruit coctail in light syrup just before he wraps them in foil for the end game. You can use anything you want and you will be quite happy. I think the idea is to keep them moist and not really impart a whole bunch of flavor. That is what the spices and smoke will do. Just my two cents though.
Well, it's not a new technique, sorry, but good thinking, you're looking at new ways to do things.

I'm mentioned before in posts that Apple Juice, in fact all juices is mostly water. You can take concentrate and use it directly. It's more concentrated and can burn easily because of the increase sugar concentration (without the water)

You can also smoke with apple wood.
