I have hung up to 5 slabs of babybacks with plenty of space left for more. I think the only thing you have to watch out for is that they do not touch each other or the back of the unit. That was one of my reasons for moving up from the smokette to a 55. You will be suprised at the extra room you will get compared to the smokette.
The slabs I have done may be longer than normal, but I cut them to half their length and can hang 6 full slabs in my 50 (12 half slabs as I have described). Maybe, if I trimmed them more to length, I could get 12 slabs in the 50. It's only the length that keeps me from doing full slabs. Directions I read says to leave the bottom rack in the 50 and doing so makes the slabs fold over and touch each other.

Maybe I missed something. Do they have a different breed of Hog in Illinois that has more ribs per slab???

Just a little poke of fun. Did you mean you trimmed them to St. Louis or Kansas City (so they are more narrow than wide)?

I only use ribs from the small hogs. Here we cook grown hog's ribs one at a time. Just kidding.
I have trimmed them St. Louis style and also bought St. Louis style ribs, so they are narrower than a full slab of ribs. It's not the width, but the length, even on the St. Louis style that I bought, that causes me to cut them to half their length. If I don't, even with the shelf holder at its highest position and hooking the ribs about three down from the top, the ribs will lay on the bottom shelf and touch each other. Maybe I am a little too cautious about having the ribs touch. I had read somewhere to put the botton shelf in just in case a slab fell off the rib hooks. Maybe I don't need to do that????
I don't have any problem if the ribs touch each other...they were born that way.

No seriously. The only problem if they touch will be the overlap won't get any smoke to it, since one slab covers the other. If you have to smoke a lot, just rotate them half way through the smoke and the overlap won't be much of a problem.
