with brisket i normally go as follows
2 hours smoke setting
5 hours near 250
4 hours crutched (wrapped in foil)180. this is while i get some sleep
2-3 hours 275 (thats when the ribs go on)
temp i look for with 13 pound packers is around 191-194.
hit it on the button at minneola but lost direction and changed to flats at others advice and thats the last time i make that mistake
