I've got a question to the group. I got my FEC100 last month and have cooked several times in it already without any problems. I was told CS has a new bottom/side pannel which goes on the control box of the FEC which allows for better air flow. I called and got this panel ordered and installed it. Now I've noticed a bunch of ash all over the bottom of the interior. I also noticed a lot more smoke coming out of the FEC. My problem is when I cleaned off the racks after doing two butts, I noticed ash all over the inside walls and on the racks. I take it this is because of more air flowing through the inside of the smoker. If anyone else has this new panel installed (I believe the new FEC100's come with it on) have you also noticed ash all over the inside of the smoker? If there's ash on the racks, then I know there's ash getting onto my meat. Any suggestions other than putting the old panel back on?

I don't have the addition,but on most new FEC s,once the walls get greased and seasoned,the ash drops drastically.

There does seem to be a little more ash on the foil on the floor,than the old cookers,but haven't heard anyone comment about ash on the meat.

Most of us do make a point of being sure the ash is cleaned out of the firepot,on the new cookers.

Eddy spent a lot of time to work out airflow,etc..

We've used every model he's made,all over the country,since he has made them,and haven't found the need to change his design yet.

There are instances,like OK 30-40 mph winds,you can't turn the cooker away,and the fire runs too hot,that a stack is needed.

When you hot cook your chicken and need to water spray into the exhaust,it takes time to disassemble the stack,every few mins. Eeker

Personally,I'd try to solve the initial symptom,before I redesigned EDDY's cooker.

Michaelkc, As you know, this FEC was not used very much. I do have an elbow on it. I am off starting Saturday for the next two weeks and expect to do a bunch of smoking. So I am going to wait until I get a few more smokes done and see if this changes things. Appreciate the help.
