Earlier this week I went with some guys from work to a local Chinese buffet for lunch, and as I passed the “ribs” they were serving, I started thinking about how good ribs cooked with Asian flavors could be. I have tried the ribs at these kind of places many times, but I don’t think they were ever worth eating.

Over the next few days I spent more time than I should have day dreaming about smoking some Asian flavored ribs on the weekend.

Yesterday I made up a rub:

2 T. light brown sugar
2 t. Korean crushed red pepper (the stuff is pretty mild, I’ll go heavier next time)
1 ½ t. garlic powder
1 ½ t. onion powder
1 t. ground ginger
1 t. ground mustard
1 t. black pepper
1 t. kosher salt
½ t. Chinese five spice (I've learned my lesson to go easy on this stuff)

I made a glaze/sauce with some Gochujang (Korean Hot Pepper Paste), honey, soy sauce, rice vinegar, garlic and ginger, fish sauce, and a little sriracha to make it spicier. I didn't measure anything, just dumped a little of this a little of that, turned out pretty tasty.

I smoked up some loin back ribs with with rub and finished them up with some of the glaze.



They turned out delicious, and satisfied that sweet and spicy craving I was having. I served them with a creamy Asian coleslaw, and there was nothing left after dinner.

I am starting to think about some other types of flavors to experiment with the smoker.
