Well, I just did my first baby backs on the ol' smo25 yesterday for a closeknit group of friends...I must have done something right as 3 1/2 racks out of 4 were gone in no time (about 11 lbs total before cooking weight)six hungry guests ( total cook time at 225 degs. and 2 1/2 ozs. of apple wood for 3 1/2 hours)I did remove all the membranes.. not that hard to do afer you get the hang of it...Looked over many different rubs and decided to improvise on the ones that sounded the best...I think I like a little more brown sugar added than most recomended, but they still came out delicious..I applied the rub 1 1/2 hours before smoking..I have had the smoker for less than two weeks and can't get enough of that good ol' smoke filled air...
