Your game plan will work but the margin of error increases considerably due to the increased heat source. Temps over 350 will caramelize and possibly burn the sugars in your rub.

My suggestion would be to wait until the last 30 minutes. Keep the grill fire low and place the racks offset from the coals. Keep a close eye on them.

I assume you're looking for a crisper bark on ribs?
