As a newbee I like these links from 'Notes' so far;
http://www.scbbqa.com/myths/Salt.html for its salt in rubs myth
coverage.
http://www.scbbqa.com/beef/Steak.html for its minimal use of salt, the
nose doesn't need much salt, see http://www.scbbqa.com/notes/Salt.html
(Salt - information every cook should know)

Two Pepper Marinade (makes 1 1/2 cups)

2/3 cup Worcestershire Sauce
1/4 cup olive oil
1/4 cup fine balsamic vinegar (substitute white wine vinegar)
1 small shallot, finely chopped
1 tsp. fresh chives
1 tsp. ground black pepper
1 tsp. ground white pepper
1/4 tsp. salt

This note is good news!

Danger of eating raw pork called "clinical rarity"; http://www.scbbqa.com/safety/Trichinosis.html

And Mayo link is good too.
