I was watching Planet Earth last week, and they had a special on the top 10 BBQ restaurants in the US. I have no idea why this was on Planet Green... Anyway, the number 3 BBQ joint on their list was Central BBQ in Memphis. They featured their BBQ nachos. I had a bunch of leftover pulled pork in the freezer, so I thought I would give it a try, with a few modifications. Here are my ingredients:

- Blue Corn Tortilla Chips (Central used regular chips)
- Pulled Pork
- A mixture of monterey jack, cheddar, and pepper jack cheese (Central just use cheddar and nacho cheese sauce)
- Sliced Jalapeños
- Some of Smokin's finishing sauce
- Whatever BBQ sauce you happen to have in the refrigerator (I used my last bit of Stubbs)

Simply warm up the pulled pork and layer on the chips, add Smokin's sauce, add some BBQ sauce, add the cheese, and then zap in the microwave to melt the cheese. Finally, add some jalapeño slices to taste.

You know what, it was pretty darn good!
