I do beef ribs in my AmeriQue. I set the temp to 225* and go for 6-1/2 hours and then open the door and check to see if they are like we like them. I put the ribs in at room temp and do not preheat the smoker. Make sure you pull the membrane, put on your dry rub and then you are good to go. Hope this helps. Good luck.
