I purchased two slabs of beef ribs weighing a total of 8.25 pounds. I removed the membrane and seasoned them over night with the CS Rib Rub. I put 2 oz of hickory and 2 oz of cherry wood in the wood box. Just started the smoker set at 225 degrees and I inserted the thermometer in the ribs but not too sure that it is giving an accirate reading. My question is how long should it take to cook the beef ribs and what internal temp should I strive to achieve? Also do I want to mop the ribs after a few hours?
Any advice/suggestions are greatly appreciated!!!

I checked on my ribs and they had hardly gone up like only 17 degrees! I thought WOW, I had already hit the plateau really early!!! UUUGGGHHHHH
NOOO, it seems MY SON UNPLUGGED MY SMOKER to plug in a spot light so could use his solar baseball hitter in the dark! AND HE DID NOT PLUG MY SMOKER BACK IN! uuuuGGGHHhhhhhhhhj

Good thing I did tell anyone I was bringing ribs for dinner tonight! UUUGGGHHHH I think this is far worse than forgetting to poke a hole in the foil!!! UUUGGGHHHH I feel soo stupid! OMG, how could I have done this! I am not too sure smoking is for ME!!!

Please tell me someone else has done this!!!! UUUGGGHHHHH
