Greetings, all. I'm the proud owner of an SM009 for several years now. On to my question...

I am smoking a ~10 lb. pork butt this weekend. I will need to then transport it about 100 miles and then it will sit for another few hours until dinner time. What's the best way for me to transport it? I was thinking I would seal it in a plastic bag straight out of the smoker, then I would pull it after the drive and it would sit for 2-3 more hours before consumption. The other option would be to pull it right away, then put it in an aluminum container with a lid and transport it that way. Also, it is recommended that I re-heat it before serving? It will pretty much be room temperature by that time, either way.

gotta to agree that FTC (Foil, Towel, Cooler) is the way to go. prewarm the cooler by addition of hot or nearly boiling water. when you're ready, double wrap the shoulder in foil. drain water from cooler. wrap foiled shoulder in some fluffy towels and insert into cooler.

keeps above 160F for many hours if you resist the temptation to open the lid!
