Tom and Smokin',
I said I would let you know how my first Turkey came out in my CS150. Well, I used Tom's and Smokin's advice, and it turned out GREAT!! Very moist and tender. It weighed 11.5lbs and I smoked at 225 for 6 hours with 4oz of hickory, and 3 oz of mesguite. Injecdted it with strained "Zesty Italian" and 1/2 can of beer. Put on the middle rack in the smoker and let her rip. I also smoked a ham with honey glaze, and it was delicious also. I think this smoker is "Magic" 'cause I had never smoked a ham or a turkey before and they were both perfect! I'm doing a brisket tonight to take to my mother-in-laws tomorrow. I can't wait to see how it turns out. But with all of the advice I've read on these forums, I'm betting it will be excellent also. I just wanted to say THANKS especially to Tom and Smokin'!! You guys really know your stuff! I'll let you know how the brisket turns out.....Larry
