Here's some pics of last weekend's cook. I'm starting to think that the FE runs better at cold temps. Anyway I pulled out my reference book from the Fast Eddy Dr. Ray class and pretty much ran thru the whole thing.

Butts and brisket

This stuff came out really good with the special beujolis.

without a doubt this was the biggest hit of all. I had a test panel of 10 that said they were the best I've put out so far. Sweet and Complex is an understatement. Eddy,Dr.Ray Stuart and Russ These would have made you proud.

Joe, I smoked these for 1.3/4 hr. in MN this time of year that's about 120 on the temp. went to 225 for 2 hrs. and then 275 for 1hr. Pulled the ribs and and foiled them while I blasted my chicken at 325 pulled chicken sauced the ribs and put them back in for about 15 min.
If i can give you any advice on using your FE,I'd say go into smokinokie's BBQ guide. You'll get tons of info out of that. then go back into the archives and read the posts. There's more info in those sites than you'll ever need. Good luck with your new FE

Randy, Thanks for the information. I have had problems getting my fec100 started. I tried the 3 minutes on at the smoke setting and then off and back on at the 3 minutes smoke setting and I do get smoke and when you look in the pot you see it burning. The problem is when you turn it up to lets say 180 the pot just overflows and the temp never got over 50 degrees. The temp here has been between 25 - 34 degrees all weekend.

Any ideas would be appreciated.
Joe,

If you're getting smoke, it's working fine. What may be happening is that you're getting power fluctuations. You may need to run it off a battery and inverter. Look back through the owners archives and you'll see several topics about battery power.

If the power fluctuates, the ignitor stops working and you will get a pot full of pellets.
