I started to prepare the two boenless butts I'm doing tonight. One of them is quite 'floppy' , a lot of chunks hanking off of it like the butcher tried to butterfly the sucker. I'm guessing I should just tie the butt up with butchers twine rather then cook the thing with the loose peices hanging off of it? When you buy the butts wrapped in plastic you don't know what it's going to look like until you use it....
